Lathyrus clymenum is a flowering plant in the Fabaceae family, native to the Mediterranean. The seeds are used to prepare a Greek dish called fava Santorini. The plant is cultivated for more than 3.500 years on the island and has a Protected Designation of Origin. Villa Fava, one of the most prestigious properties on Santorini, consists of 3 individual apartments that can be used either unified as one house or as three totally separated apartments called Helios Suite, Gaia Suite, and Aeolos Suite. The internal temperature varies from 21 to 24 Degrees Celsius throughout the summer period due to the bioclimatic vernacular construction of the residence.
